Homemade Veggie Ramen for a Quick and Easy Dinner!

Recipe Breakdown:
10 Minutes Prep
15 minutes Cook Time

Veggies:
1 Cup Carrots
3 Garlic Cloves
1 Cup Green Onions
1 Jalapeño
2 Cups Shitake Mushrooms
1 Thumb Ginger
Green Onions

Fridge Ingredients:

  1. 2 Eggs
    4 Cups Vegetable Broth can use chicken as well

    Condiments:
    Sirarcha according to taste
    3 Tbl low sodium Soy Sauce or Tamari
    Salt & Pepper to taste

    Oils:
    Seseme Oil
    Olive Oil

    Dry Ingredients:
    2 Packages Ramen Noodles trash the flavoring packets

    Instructions:
    1. Soft boil the eggs: Fill a medium pot of water and bring it to a boil, then reduce to a simmer. Gently lower the eggs into the water with a spoon and simmer for 6.5- 7 minutes. Meanwhile, prepare a bowl of ice water for when they are done! This is to stop the cooking process. Once they are cool, you can peel.

  2. Meanwhile, thinly slice the garlic and grab ginger paste.

  3. In another large pot (2 total), heat the sesame oil and olive oil over medium high heat. Add the garlic and ginger and saute for 1 minute, stirring constantly. Add the vegetable broth and bring to a simmer. Add the soy sauce and tamari.

  4. Remove the stems from the shiitake mushrooms and thinly slice them. Thinly slice the green onions and set aside. Place the mushrooms in the broth and cook 5 minutes. Add mushrooms, green onion and carrots and cook for 1 minute. Taste the broth and season with salt until the flavor is what you want, adding a splash of the low soy sauce if needed.

  5. In the pot used for the eggs, bring fresh water to a boil and boil the ramen noodles until just tender, around 2 to 3 minutes, then drain.

  6. To serve, place noodles in a bowl and top with broth, vegetables, and soft-boiled eggs. Garnish with green onions, sirarcha, chili sauce, or other low sugar condiments!


    This was SO easy, nephew approved, and one I will be making probably every week! Get the kids involved and have them choose the veggies they want in their ramen. Eating healthy doesnt have to be boring or take out some of our favorites. Having the ramen packages in the house can sometimes be that life saver for an easy dinner the whole family will love.
    Add some veggies on the side for extra greens ( I made roasted green beans) and walllahhhhh. 15 minute dinner, done.
