No more having your dinner and fixing your kids something separate, these homemade Stuffed Avocados are soooooo good…

Having a dinner both the kids and hubby approve can be a job in itself, ammmm I riiightttt? Not to mention, a dinner that actually taste good AND can help us stay on track too. These stuffed avocados have been one that stick around because they’re so easy to change up, customize how you like and cost less than $6 per person. Say what?!

Anythign and everything that will give my plate some color, Im all about!

Heres the base of how I made my Plant Based Stuffed Avocado! You can add a lean protein like steak, shredded chicken or even turkey to give this a little extra protein and texture!

Serving Size for 2:

  • 2 Medium Avocados

  • 1 Can Reduced Sodium Black Beans

  • 1 Can Corn

  • 1 Can Seasoned Tomatoes or 1 Fresh Tomato, Diced

  • 1 yellow onion, diced

  • I Can Green Enchilada Sauce

  • 2 Cups Cooked Rice homemade rice recipe below

  • 1 Pkg Less Sodium Taco Seasoning

*Optional Toppings: Salsa, Cilantro, Salt & Pepper to taste

*Rice: 2 Cups Jasmine Rice, 2 Cups Vegetable Stock, 1 Chicken Cube, 2 Basil Leaves

Instructions:

  • Combine Black Beans, Onion, Corn and Taco Seasoning in a Medium Skillet and cook on medium until warm (make sure and drain the beans and corn….gross)

  • Stir in Cooked Rice and Enchilada sauce until slightly covered

  • Add in Tomatoes last and top with cheese (LIGHTLY! Your fats are mainly from your avocados)

  • Scoop about 1tsp avocado out of center and fill with 2heaping TBL of filling

  • Top with Cilantro and Salsa…… ENJOY!

You can always change these up by changing up the fillings and adding extra vegetables like grilled peppers, jalapeños or switching up your protein sources! Let the kiddos choose what they want on theirs and watch dinner become a family affair again!
